Crunchy Oriental Salad (From: Susan)

2 bags of shredded cabage

3 carrots, shredded

1 bunch of scallions, minced

3 packages of Ramen Noodle Soup, Oriental flavor

2/3 cup dry roasted peanuts

½ cup shelled sunflower seeds

In a large bowl, mix shredded cabbage, carrots, and scallions. Break up noodle into small pieces, and add with peanuts and sunflower seeds to the vegetables.

Just before serving, prepare a dressing from ½ cup sugar, ¼ cup rice wine vinegar, 1 cup canola oil, and 3 seasoning packets from the Ramen Noodles. Don’t mix the salad and dressing too far in advance so that the salad is “crunchy.”
