Orzo Tomato Basil Salad (From: Susan)

1 lb. box of orzo, cooked al dente

½ cup of diced tomatoes

½ cup sliced sun dried tomatoes in oil (drain oil before slicing)

1 bunch of scallions minced

½ cup chopped parsley

¼ cup chopped basil

2 cloves garlic, minced

¼ cup chopped, rinsed capers

½ cup nicoise olives, chopped

¼ cup balsamic vinegar

2/3 cup olive oil

Salt and pepper to taste

Combine tomatoes, scallions, parsley, basil, garlic, capers, olives and vinegar. Mix well. Slowly stir in oil. Let stand 30 minutes before tossing with oil. Salad is best when made 2 days in advance.
